But really, what’s going on here?
I would do anything to find the video this is from.
but uh. My best guess is that the woman has a VERY glutenous type of dough, possibly (probably) with nagaimo/mountain yam to give it that super duper gooey texture. NAGAIMO IS CRAZY STUFF LOOK IT UP. She’s using her hand to press the dough onto the griddle, which is probably VERY hot. The second the dough touches the hot griddle it adheres to the hot surface, and separates from the dough ball because of the heat, like a skin. You know how when you cook an egg, the bottom of it cooks almost instantly, but it’s still gooey where it hasn’t touched the heat yet? Then she uses the scraper in her other hand to smooth out the bubbles/remove the pancakes from the griddle. I’m guessing they are pancakes. sort of like crepes. They’ll probably be filled with… gosh, could be anything, sweet or savory.

But yeah, they do look to be used for spring rolls and such.
