I believe it’s important to eat well, even when you’re strapped for cash. It’s good for your health and energy! This cookbook is full of delicious and healthy recipes, the ingredients of which are fairly inexpensive.

(just to give you an idea, my food budget is 30 euro/week at most [about $38] and I have to maintain a healthy diet due to weird medication side-effects and yeah, basically this book is a lifesaver if you’re broke but need to watch what you’re eating)

what is the MAGIC

it’s called mochi!

it’s like ice cream in a soft skin!

also, it’s fucking amazing!

This is もちアイス (mochiaisu) and the “soft skin” is pounded rice cake. The white stuff you see on the outside is powdered sugar so they won’t get sticky. It’s very delicious on a hot day and you can get these at the right self-serve frozen yogurt joints. Unfortunately North America sells one mochiaisu for a dollar and some cents whereas in Japan you can get these by the boxful in any supermarket.

you can make it yourself at home folks! Mochi is really simple to make, all you have to do is take 2 cups rice flower, mix with 1 cup water and ½ cup sugar, boil it in a pot or put in a ceranwrap covered bowl and put in microwave for 7 minutes. turn off the heat and stir it until it becomes solid and sticky. Then you can roll it into balls with a little bit of rice flour on top to keep it from being too sticky. Then you can eat it just like that, cover a scoop of ice cream and freeze it to make this, or you can make Strawberry Daifuku which is strawberries and red bean paste (anko) wrapped in mochi. I make it all the time!

Low Spoons Cooking

(I’m making this post for a friend, but I figured some other people might get some use out of it as well.)

I know it can be super difficult to find the time and the energy to cook things sometimes. Even just looking up recipes can be super stressful when you’re low on spoons, because everything seems to take so much effort. But please, friends! You should still eat something! D: 

This is a list of sites and blogs that house good, simple, cheap recipes which hopefully will help. Everything is easier if you have a crock pot/slow cooker! 

  • http://no-more-ramen.tumblr.com - this site has a “no chopping” tag and a “crockpot” tag for if you really just can’t today, and also makes sure to note gluten/nut/egg/dairy and vegetarian/diabetic-friendly recipes! Super awesome!

  • http://lowspoonsgourmet.tumblr.com - they organize things by spoon number in the tags, from 1 spoon to 7 spoons! Unfortunately their mods aren’t 100% consistent on tags BUT it looks like you can find good recipes under either the “recipe” tag or the “mod fae” tag. 

  • http://www.budgetbytes.com - This site has a ton of crockpot recipes. Just throw the ingredients in the cooker and walk away, come back whenever!! These recipes have a lot more ingredients than some other ones but you can always ignore half of the list if you don’t have them, or substitute. 

  • http://allrecipes.com/recipes/157/everyday-cooking/campus-cooking/ - Campus cooking sites are good too because they specialize in recipes that make a lot of food out of very few ingredients. 

  • http://ridiculouslyeasyfood.tumblr.com - not a lot here, but what they do have is really good and easy to make, especially on a budget! Plus, good directions!

  • The tag “low spoons food” on tumblr itself also has a good number of recipes and advice, from what I can see.

Deep-Dish Chocolate Chip Cookie for One

 Ingredients (1 serving):

  • 1 Tbsp unsalted butter, at room temperature
  • ½ Tbsp unrefined granulated sugar, such as evaporated cane juice
  • ½ Tbsp packed light brown sugar
  • 1 Tbsp beaten egg, preferably organic (cover & chill remaining beaten egg for tomorrow’s cookie cup… you will be making another one!)
  • tiny splash pure vanilla extract
  • 2 1/2 Tbsp whole wheat pastry flour (can substitute with 3:1 of cake flour and all purpose flour)
  • 1/8 tsp baking soda
  • tiny pinch salt
  • heaping 1 Tbsp grain-sweetened chocolate chips, such as Sunspire

Instructions

In a small ramekin or microwavable cup, combine softened butter and both sugars; stir well with a spoon. Stir in beaten egg and vanilla extract. Stir in flour, baking soda, and salt just until combined. Stir in chocolate chips.

Microwave on high for 35-40 seconds. Let cookie rest at room temperature for about 10 seconds before devouring.

Nutritional Information:

253.2 calories, 13.8 grams fat, 8.4 grams saturated fat, 2.9 grams fiber, 17.5 grams sugars, 2.4 grams protein
